LIKE Case Sensitivity

I am having an issue with the case sensitivity of the SQL LIKE clause.
The MySQL documentation says that by default the LIKE search is case insensitive. However, I am experiencing the exact opposite. How can turn OFF the case sensitivity of the LIKE clause?
