Scheduled maintenance

Guys,

I'm wondering in mysql version 3x, how do I run a scheduled maintenance task to reduce the size of all my tables e.g reduce all to current_timestamp < 30 days ?
One of my tables is always growing and I want it to roll over more so than grow so have a history of 30 days and then roll over ?
Any ideas or workarounds much apprecitaed ;)
