mySQL database intial set-up

It has been years since I built a mySQL database. Any help and guidance will be greatly appreciated.

I have a prospective client who wants to have a database built for the downloading and/or playing his sermons. I have the basic database built. The part which is causing my confusion is anytime I select the Type as Text or Character the Collation is automatically set to "latin_1_sweedish_ci" and I can not find any selection in the drop down to set the collation to English.

To start with, why do these Types require any kind of "Collation"? And, why is it automatically "Sweedish"? These two fields will be holding URLs to either download or play the sermon. So, maybe I am trying to set the fields to the wrong Type.
