Which Engine is best for me?

Hi, I'm seeing a fairly large MySQL 'ibdata1' file suddenly and am thinking about a couple of changes. Can I change from Engine type InnoDB to MyISAM easy enough and then re-populate table data after dumping tables? I had read where InnoDB could have negative impacts on the size of "ibdata1" files.

Also, I had used text in the past as a field choice where perhaps I should have used varchar 500. field length runs from about 50 characters to as high as 500 and I wondered if that 'text' data field type may be growing in a huge way.
