How do I change the character encoding?

I set up a MySql database via phpMyAdmin. It defaulted to giving all of the fields a Collation of latin1_swedish_ci. I assume this is the same as the accepted character encoding of the field?

We started off in the US, but now we have a lot of international customers. We have some Turkish customers whose names get mangled when they try to input them into our database. I have been told that I need to change the character encoding to UTF8. How do I do this?
