The questions you are asking have answers that are far too involved for a forum like this. Nobody can really guide you in building a full blown data model for a product in this type of forum, and if you really are that much of a beginner (no insult intended), then I think you would be best to bring on a person who has much more experience, pay them to build the data model and physical database, and then learn what they did and why.
