The trade-off between using LIKE and using FULLTEXT is accuracy versus speed. LIKE will return accurate results, but the potential is there to require a full-table scan. FULLTEXT returns quickly but has limitations regarding accuracy, keyword density, word length, etc.

LIKE can select for multple keywords, for example '%apple%green%', but they have to appear in the correct order. Using the normalized approach I mentioned there is some greater flexibility and performance.
