James,
filing a feature request for multi monitor support is a good idea. Until this is solved use multiple instances of MySQL Workbench by setting "Allow more than one instance of MySQL Workbench to run" in the preferences ("General" tab).
However, keep in mind that all running instances of the Application work on the same configuration files. For instance changing the connections list in two running instances will make the state of that persistant which was closed last.
