that is when you install MySQL Server product?

probabably you are having a problem with the registry and the installer is finding a registry key that contains that path so that is why is re-using the path.

when you select the product to be installed you will see a link called "advanced options" where you can select another path for installdir and for datadir

try to set you desired folder there
