The data directory and install directory can be changed in advance options, will appear when you select the product from the list of the right, once you choose to install the server, this in the custom setup type

Advance options will change depending on the selected product, please first select the product and then advance options will show two paths, install dir and data dir

MySQL Server is the only product that have those two options, the rest of the products will only ask for install dir
