Many thanks for the reply Javier,

The process is a bit flipped actually. I'm using the Edit MySQL Data select option to load the data into a blank spreadsheet. The data in the columns that are having problems are TinyInt(3) datatypes, but when they are brought into Excel they look like they are not be brought in with a format that allow's negative values.

I don't see a control that would allow me to change these default values before the creation of the spreadsheet.
