Hey Dave -
First off my bias is towards UNIX. I think MySQL runs better in the unix environment. I don't think of desktop OS's as particularily stable, nor fast. You forgot (or perhaps I couldn't find it??) the amount of RAM you have. It's difficult to make server setting suggestions without it. I highly recommend that you use at least 2GB in a production environment. I dream of 8 GB but 4 is as much as they'll give me (but for some reason they're really stingy with the hardware around here).

I see some server settings that could be tweaked but without knowing what the RAM is I dare not mention any numbers!
