I misunderstood your question.
SELECT function_name(...) ... cannot work---SQL doesn't support token substitutions like that.
But a function can be used to generate a PREPAREd query, eg if function_name() accepts params and returns a Select list, you can write ...
set @q = concat('select ', function_name(...), ' from ', ...etc...);
prepare stmt from @q;
execute stmt;
drop prepare stmt;
