Thanks for your answer. I did it! I put to the
command in starting script log=/path/to/new/directory

and then: /etc/init.d/mysgl restart (this is starting
script in my Gentoo instalation) and - nothing
changed - the log is still in the same place as data.

I checked permissions - they are ok!

It does not want to act as it should!
And I don't know why?

Any other suggestions?
