Best path: latest 5.1 -> latest 5.5 -> latest 5.6 -> latest 5.7.
At each step, do a full mysqldump of the data before proceeding to the next stage. In the case of 5.6->5.7, MySQL usually leaves the 5.6 data in place and initialises a new data folder, so you'll need to import the 5.6 data into it.
