Evidently this was
not a fresh install as your heading says, rather you were trying to mount an 8.0 installation over an existing 5.7 installation.
The manual has detailed options & instructions for upgrading to 6.0 on Linux & Windows, but I don't see a specific manual page for upgrading on a mac.
So if it's me on a mac, I take a complete data backup, test it thoroughly, wipe off mysql 5.7, then follow instructions at
https://dev.mysql.com/doc/refman/8.0/en/osx-installation.html.
