Switching default charsets from latin to utf8

When I originally started using MySQL I didn't have much idea about what options to choose and left configuration mostly to its defaults.
I've heard since that my tables, all defaulting to latin1, should be using utf8 so that I can use the database in other languages.
My tables now have data, and some are localized into german which appears to be being displayed ok.
I want to switch them over to utf8 but Im not sure what impact this will have on data already in there.
Can I just change the charsets for the table/fields without breaking everything or do i need to create a new database and export/import (not really relishing that thought)
