Help! Japanese text garbled in backups!

- I have a MySQL 4.0 database which powers a PHP-based web app.
- Through the web app, Japanese text in UTF-8 was inserted into the MYSQL tables, which were in latin1.
- MySQL was upgraded to 4.1, but the tables did not go through the intermediate binary step.
- The 4.1 database now has UTF8-encoded Japanese text in the latin1 columns.
- The web application displays the Japanese text correctly, but when I back up the database using mysqldump the text becomes garbled. Thus, my backups are useless.
How do I backup this text correctly?
