CHARSET and COLLATION go together -- cannot have CHARSET=latin2 with COLLATION=utf8...

What you showed is the _default_ for fields in the table. Can you do SHOW CREATE TABLE to see what the _actual_ CHARSET is for each column. (In the UI, you can do that as a Query.)
