About GBK and UTF-8 in Mysql

Hi all,
I've been stuck with a strange problem.
1.When I read content from my working Mysql Server,I got a sequence of normal GBK characters.
2.Then I reboot the Mysql Server.
3.Now I execute the same Mysql query statement,I still can get some content.And curiouser,there is nothing but a sequence of unrecognizable UTF-8 characters.
4.Then I query some infomation of my new connection,I find that the "default_character_set" field now turn into "UTF-8" when it was "GBK" before rebooting.
I guess that content must have been improperly cached by the Mysql Server.However,I have no idea to test and verify it.
Can any brilliant guy figure it out?
