There could be differences in the server's default charaset, the database's default charset, etc. I would expect the mysqldump to have all the charset values quite explicit; are they?
I say charset (character set) not collation, because that is the dominant issue. The latin1 charset has certain possible collations; they all begin with 'latin1'. The utf8 characterset has several utf8_... collations.
It may be as simple as setting an option on mysql as you reload the dump.
