Nevermind, a good night's sleep helped me figure it out. I simply needed to change the default character set for my connection object. It apparently had nothing to do with the MySQL defaults. It is a little worrisome that the documentation for the connection object says that I should never need to change the character set... Thanks to anyone who considered possible solutions to my problem.
