Hi. Unfortunately there is no "right way", since a lot will depend on your schema and your actual data.

I suggest that you have a look at slides 15-19 in this presentation: https://www.slideshare.net/BerntMariusJohnsen/mysql-80-unicode-why-what-how

The presentation is about MySQL 8.0 and migrating from latin1 in 5.7 to utf8mb4 in 8.0, but in principle the problems discussed will apply to your case too.
