If you have an ability to run an instance of 5.1 in a test environment first, and then upgrade in production you might try that.

There are plenty of production sites running 5.1 (we run 5.1.24 on all our production servers), and have been doing so for quite some time. Though it's not GA, it is RC, so most major bugs have been flushed out and addressed.

I wouldn't suggest just upgrading directly in production, but if you can do it in test first, then it would also give you the ability to work with partitioning and flush out your partitioning design before going live.
