Partitioning works fine and as expected in a production environment, as much as it does in any database. We use partitioning in production (mostly with innodb) and it works great - and there are many companies out there using 5.1 partitioning in production (with both innodb and myisam) and have been for some time.
Moving partitions to separate disks, however, would proabably be best done with myisam tables only in production - it can be done with innodb tables, but I might be hesitant to do it in production.
