i ran apache and mysql on an OSX machine for 1 year with not one crash or problem... this was running on 10.1 (which was a very old version and a lot less stable then newer versions of OSX). I took my server down because i moved locations but i still have it here just in case. I also handled mail with sendmail and ran php too. Even when the power went out it booted back up and set itself up like nothing happened.

when i read the title to this post i had assumed you were running windows :) and was going to recommend a distro of linux... maybe you have some faulty memory or a bad hard drive? I have some friends running everything on linux (not sure which distro) and they don't have any problems.
