Required upgrade path is 5.1 -> 5.5 -> 5.6 -> 5.7.
So if you have 5.1 schema folders, your best bet would be to uninstall 5.7, install 5.1, shut it down, move the schema folders into place, restart mysql, and see what can be used.
Once you have them working in 5.1, backup with mysqldump, upgrade and import in turn till you reach 5.7.
