Sorted.
Not only did the v8.0 install not quit the v5.7 processes currently running, but it also failed to 'unload' the launch daemon that started it. Not realising this, I binned it, yet it was still 'loaded'. Once I realised this (a while ago but MySQL.com has been uncontactable for some time) I unloaded the old one and now I can 'load' the new launch daemon to start it with the right options.
Not all good though as I cannot seem to get it to use a different data directory, but if I am unable to figure it out, that'll be the subject of a different topic.
