No root password prompt during installation

I'm running the current version (19.1) of Linux Mint and have tried installing MySQL server via software manager and by following Oracle's apt-get instructions. Neither one prompted me to assign a password for root like the version 5.7 installation did. I read in the online documentation that the root account doesn't have a password after installing, but I can't connect using Workbench or the command line w/o one.

If I can't access the server, I'll have to keep using version 5.7 or switch to MariaDB, which I really don't want to do. How do I get around this? Thank you.
