Probably?

I know no workaround for trying to skip 5.7. Now I expect you'll need to do it the hard way ...

1 on another machine, install mysql 5.6

2 load the last mysal data backup you made before you upgraded

3 upgrade to 5.7

4 test, when everything proves ok, mysqldump everything

5 upgrade to 8.0

6 again test, when everything proves ok, mysqldump everything

7 uninstall MySQL from the present machine, install 8.0, load the dump made in step 6.
