If you have another machine, install 5.7 there, get it running, shut it down, move the newly installed mysql data folder to another folder, replace it with a copy of the data folder from the backup, delete iblogfile*, get it running, then follow https://mysqlserverteam.com/inplace-upgrade-from-mysql-5-7-to-mysql-8-0/

Otherwise I think the safest bet would be to uninstall 8.0 entirely, install 5.7, proceed as above to copy in your 5.7 folders & files, get it running, fix any errors, then follow https://mysqlserverteam.com/inplace-upgrade-from-mysql-5-7-to-mysql-8-0/
