5.6 has passed end-of-life, you'll need an archive version.
You'll need to migrate Ubuntu too. I forget what 5.6 needed, 5.7 wants 18, 8.0 needs 20 or 21.
I think you're going to need to debug the migration process on a test source & replica, schedule the move to production only when you're satisfied that everything works.
