I see the problem:

A) Downloading the repo from https://dev.mysql.com/get/mysql80-community-release-sl15-7.noarch.rpm on a system WITHOUT an existing MySQL installation works and I can install 8.1 without any problem.

B) zypper does NOT update the repository content from https://dev.mysql.com/get/mysql80-community-release-sl15-7.noarch.rpm on an existing installation and this is the problem - because *innovation* is not there.

I don't know if B) is a zypper or MySQL problem.

Very simple: If the repository would be updated then I can continue with the steps in the link which "Jon Stephens" mentioned in his answer.
