Table optimization

Hello,
I have a question about the optimizing MySQL table.
For instance, if you use phpmyadmin and if the table has overhead, a button "Optimize Table" will appear, then you click the button, then the overhead gone. I am sure, for some purposes, MySQL doesn't do optimization automatically. Just curious what purpose it is.
