The print layout functionality is simply missing in the latest release of
Workbench. In the next release, there will be a diagram size dialog, where
you can select how many pages your diagram will span vertically and horizontally.

There will also be other more advanced features so that you can print your
diagram in specific layouts, picking specific portions of the model,
different scaling etc. That may take a couple more beta releases until it
appears, but that surely is a feature that will be in the new Workbench.

Please be patient and keep trying the betas.
