A server instance is the connection to the database plus the required data to manage its associated MySQL Server (e.g. the ssh user and password for a remote linux server). So, without this extra data, Workbench won't be able, for example, to start/stop/restart your server, among many others. But if you only want to do modelling and queries, it's OK to define a connection with no associated server instance.
