Hello Justin,
unfortunately there's no option to do this from the gui but you can try to do this manually. Look for the main_menu.xml file.
It's located inside MySQL Wokrbench installation directory.
Once you have it, open it with some notepad like application and search for the string
You should spot a section inside of which you'll find value tag with key named "shortcut"
This is what you need to change.
Of course please make a backup first, and remember that some shortcuts may be already taken by some other functions.
There's also tag value with key "platform" which tells you on which platform particular shortcut is valid.
I hope this will allow you to change the shortcut.
