For such errors, eg with the error log and my.cnf,
https://askubuntu.com/questions/743286/mysql-workbench-error-log-permission-denied, though it's for ubuntu, should work on the mac since mac os is based on linux.
There should be a sample my.cnf at /usr/local/mysql/support-files/ .
If it's me, I leave WB aside until I can start MySQL server manually and till I can start and stop the MySQL service.
