Hello Damon,
thank you for your continued interest in using the InnoDB Cluster feature. I recommend addressing your questions to the replication forum (https://forums.mysql.com/list.php?26), people there should be able to help you getting your setup working specially since MySQL Installer is only meant to provide a basic setup. For more complex setups, the MySQL Shell is recommended, you can access the documentation related to setting up InnoDB clusters at: https://dev.mysql.com/doc/refman/8.0/en/mysql-innodb-cluster-userguide.html.
