Hello Aqeel,
there are definitely some bugs here. I'd appreciate it if you can raise one with the troubles you've been having during the upgrade.

You can identify if the upgrade has taken place if the error log contains something along these lines:

InnoDB initialization has started.
InnoDB initialization has ended.
Server upgrade from '80025' to '80032' started..
Server upgrade from '80025' to '80032' completed.
CA certificate ca.pem is self signed.
Channel mysql_main configured to support TLS. Encrypted connections are now supported for this channel.
X Plugin ready for connections. Bind-address: '::' port: 33060
C:\Program Files\MySQL\MySQL Server 8.0\bin\mysqld.exe: ready for connections. Version: '8.0.32' socket: '' port: 3306 MySQL Community Server - GPL.
Successfully started service MySQL80.

If this is not the case, executing with "--upgrade=FORCE" should do the trick and your server should be ready to be used.
