Answering your question, in MySQL for Excel 1.2.0 we added the feature to be able to save an Excel workbook that has open Edit sessions, so when the workbook is opened again (and MySQL for Excel is open) the Edit sessions are automatically restored in the same worksheets they were originally, without the need of clicking the "Edit MySQL Data" action label again.
This only works for the user that saved the Workbook and does not work sharing the Workbook with other users. This would be indeed a great enhancement for the product, you can help us by filing a bug at http:\\bugs.mysql.com as an enhancement request for this.
