Hello Sean.

That will depends on the software that you are using to install your application, nevertheless you can execute the commands stored in a text file from the console, please take a look at:
http://dev.mysql.com/doc/refman/5.5/en/mysql-batch-commands.html
http://dev.mysql.com/doc/refman/5.5/en/batch-mode.html

So you can call a CMD on the post-installation to execute your commands to create the database, just be sure that you have MySQL installed on the machine where you are doing the installation of your application.
