One problem with EAV is that it forces you to write a pivot table query for even the simplest retrieval. Arguably, it's unprofessional to implement such a design unless you can prove there's no alternative, and I notice you don't provide that reason. So I'll just refer you to "Pivot table basics: rows vs. columns" at http://www.artfulsoftware.com/queries.php, which outlines the basics of EAV query logic.
