Just to let you know that the problem is now solved, I did not understand what was really the cause but it had something to do with the following parameters under [mysqld] section of my.cnf :
default-collation=utf8_general_ci
default-character-set = utf8
I think that there were not took properly in consideration dynamically and after scheduling a restart of the concerned server (djen) this morning because I was also running out of ideas, after the restart the behaviour is now the same on both servers from Toad.
I would like to thank you a lot for your time and support about this case.
