That is most disappointing and a curious oversight.
There is a function to split arrays but not maps?
I was able to extract the key values to use as PATH separators but it appears all PATH values must be literals, they cannot be variables.
I am trying to port an SQL Server application, which uses JSON stored procedures, to MySQL. I shall have to report back that is cannot be done.
