That sounds to me as though it will be fine. Meanwhile you can look at SHOW INNODB STATUS to make sure that the variables are behaving as suggested, to confirm the theory about what is happening.
If you were using 4.0.22 or later in the 4.0.n series or 4.1.6 or later you might look at the innodb_max_purge_lag setting. Trouble is, if it kicks in, you're rate limiting things, so it'll really just tell you that your hardware is insufficient (though that might be better than running out of disk space, which you could do if the server became chronically lagged and could never catch up). http://dev.mysql.com/doc/mysql/en/innodb-start.html . Doesn't really sound that useful for your situation today, but worth mentioning for possible later utility, perhaps when running delete jobs and disabled at other times.
