you can use either BACKUP sub-command or BACKUP-AND-APPLY-LOG according to your requirement

If you do "backup and apply-log" at a time your slave will be stopped for some more extra time.
If you want to backup only... while restoring you have to apply-log which takes some more time. but it is not that significant. As long as you have the backup in your hand you can apply-log on it later.

So use BACKUP sub command for some what quick backups.
