Apparently you should store anything that is to be AES_ENCRYPTED in blob format (http://forums.devshed.com/showpost.php?p=1239639&postcount=3) or Base64 encode it (more info here http://forums.devshed.com/t265325/s.html&highlight=aes).
I think it is because a varchar field can't handle certain characters that are produced from the encryption.
