Logging spikes

I currently monitor `SHOW PROCESSLIST` and graph number of processes returned every minute to give me a metric of how busy my mysql instance is.

Generally it's pretty quiet (1-3). Two times now I've seen a spike in excess of a hundred, grinding this small server to a halt.

Looking at my httpd logs I don't see unusual traffic, looking at my mail logs, I don't see anything that would account for it on that end either. It's not an internal process since it happened at different times, and no processes in the cron use mysql.

What logging can I setup to better identify what's causing these spikes? I'm trying to find the origin so I can stop it at the source. This server was never really intended to take that kind of load.
