MySQL Character Sets

Hey,

I am making a Mambo Componenet and people will be able to store information in the DB in a number of different languages. Everything from Chinese to Farsi. The site works beautifully on my computer (I am testing locally), however when ever I try to do a DB dump, and import that information in another DB (ie. my hosting company) I keep getting question marks "????" everywhere. I was wondering if that had anything to do with the charset setting in my DB.

Currently my DB charset is "latin1" and the Collolation is "latin1_swedish_ci". The character encoding I set on my site is UTF-8.

Thing that is a little weird is that I was looking at the charset for the mambo DB and Mamblefish and he had it set to "latin1". Werid... so yea... any idea? Should I set my DB charset to utf8?
